Easter is my favorite holiday to decorate for; brightly-colored Easter eggs, happy bunnies, fresh flowers…there’s something inherently wonderful about seeing the first signs of spring after a long and cold winter.
There’s also the tasty food.
I know that coming up with a holiday menu can be a challenge, especially if you eat the same thing year after year. There’s something to be said for tradition, but it’s nice to try new recipes, too. I compiled a list of past recipes I thought would be great for an Easter brunch or early dinner, below.
Italian Easter Pie Recipe
One of my most popular posts last year was this Italian Easter Pie recipe post, so I wanted to share it again in time for the Easter holiday! Click here to view the recipe for Italian Easter Pie.
I personally can’t wait until it’s time for Easter Pie. It’s hands-down my favorite thing to eat at Easter. I don’t know if I’ll be cooking this year since we’re still (gulp) in the middle of a bathroom reno, but I will do whatever it takes to make myself a pie, haha.
Easter Brunch Recipe Ideas
The below recipes would work perfectly for an Easter brunch, too – and the bonus is that three of the four you can prepare the night before, meaning you get to spend more time with your family and loved ones. (Or, like me, you get to spend more time sleeping in on a Sunday).
- Egg and Hash Brown Overnight Casserole Recipe
- French Toast Casserole Recipe
- Ham and Cheese Mini Pie Pockets Recipe
- Cheesecake Pudding Berry Parfaits
If you end up using one of these recipes, I’d love to hear about it! Have a “hoppy” Easter!
