Avocado Chicken Salad Recipe | Life Is Sweet As A Peach

Ever have one of those days where you need something to eat and end up cleaning out the fridge in the process? I had a half cooked chicken breast, a half avocado, greek yogurt, some fresh greens and pickles. After a raid of the spice drawer, I was able to put together a tasty and healthy avocado chicken salad sandwich. This meal was under 350 calories.

Avocado Chicken Salad Recipe

Ingredients

  • 4 ounces cooked chicken, shredded
  • 1/4 of an avocado
  • 2 tablespoons low-fat plain Greek yogurt
  • 1 teaspoon lemon juice
  • Fresh spinach or lettuce (any leafy green)
  • Hamburger bun, wrap, bread, etc. (I toasted mine briefly)
  • Pickles (optional – I liked the addition of the vinegar)
  • To taste:
    • garlic powder
    • Hungarian paprika
    • salt and pepper

Instructions

  1. Shred cooked chicken with a sharp knife and fork, or cut into small pieces and put in food processor. Place in a bowl after shredded.
  2. Add avocado, yogurt, lemon juice, and spices. Mix well with a fork. Taste test, and add more lemon juice or spices if you wish.
  3. Refrigerate for 20 minutes if you can, so the spices meld together. Or like me, you can eat right away.
  4. Toast bun or bread, then assemble your sandwich. Top with leafy greens and pickles on the side.

This recipe made enough for two sandwiches. I used half on my sandwich and ate the rest of the salad plain. It could easily be shared between two people.
