We are back from our vacation, but I must admit that my mind is still on Florida time. It seemed like everywhere we went, there was key lime pie, and each slice was better than the last. (Though the best, hand’s down, was on the docks at Dewey Destin’s seafood in Destin, Florida. If you are ever there, you must go).
It was also above 90 degrees here today, and felt like Florida outside, so I thought I’d try to make a pie for dessert. Why didn’t anyone tell me how freaking easy key lime pie is to make?! It takes ten minutes (less if you buy a pre-packaged pie crust, which I cheated and did) and has only a handful of ingredients. And the results were just as good as those I had in the sunshine state!
I am not a baker, and I had no idea how to even start with this kind of pie, so I turned to the interwebs. That’s where I found this wonderfully easy recipe from Your Homebased Mom – and once again, I am thankful for all of the wonderful food bloggers out there! Her pictures and step by step instructions were easy to follow, and the results were delicious. I can’t wait to explore her other recipes. (Just an FYI, the above photo is mine – the pie I created and my new tablecloth from my stepmom, Shirl, which I’m gaga over – but the recipe is all hers!)
I’ll be back to posting original content soon, too. I have a batch of photos from our trip which I’m editing…but it is so hard to get back in the swing of things after vacation! Work ate me alive last week, and I have two super stressful and busy weeks coming up, too. I hope I remember how to swim. Ugh.
